Olive Garden Copycat Chicken Gnocchi Soup

Sauté onion, celery, and carrots in butter until softened. Add garlic and cook for about 30 seconds. Pour in chicken broth and bring to a gentle simmer. Add gnocchi and cook according to package directions. Stir in shredded rotisserie chicken, spinach, and heavy cream. Add Parmesan, parsley, paprika, onion powder, garlic powder, salt, pepper, and that little pinch of nutmeg. Simmer gently for a few minutes until creamy and heated through. Don’t let the cream boil. Taste, adjust seasoning, and finish with extra freshly grated Parmesan. 🧀
