1. Cook the pasta in a pot with salted water until al dente. Drain, keep covered & warm.
2. Coat the shrimp and chicken with cajun seasoning in separate bowls, heat oil and 1 tbspn butter over medium heat. Then, add the seasoned shrimp, saute for about 1-2 minutes per side, or until shrimp is no longer translucent, remove from skillet. Cook chicken until browned/cooked thoroughly and keep both warm.
3. In the same skillet, melt 1 tbspn butter with chopped diced bell peppers, onions, and garlic until soften (about 3-4 mins). 4 Add in the canned diced tomatoes and saute for about 2 mins.
4. Pour in heavy whipping cream, 1/4 tspn cajun seasoning, garlic powder, onion powder, paprika, white pepper, black pepper, and cayenne. Stir and parmesan cheese about 1/4 cup at a time, stir while pouring so the cheese doesn’t clump together.
5. Bring up to simmer then reduce and cook for about 3-4 mins or until sauce thickens. Taste to see if you’d like to add more seasonings, optional.
6. Add the spinach, chicken, shrimp, and pasta back into sauce skillet and stir until spinach is cooked, and sauce covers everything thoroughly, and skillet is heated through. Garnish with parsley, paprika, and more cheese (optional), and enjoy!
