1. Boil water with salt until boiling for the pasta.
2. Season chicken tenderloins with the seasonings stated above. Beat eggs, season, then season Italian bread crumb mixture. Dip chicken in egg and then fully coat in bread crumbs.
3. Pour olive oil and truffle oil in big frying pan on medium heat. Make sure there’s enough oil to cover at least half the chicken. You want to fry the chicken like chicken tenders. Wait for oil to get hot, then add in crushed garlic cloves. Let the garlic infuse into the oil for a couple of mins. Do not burn garlic. Remove.
4. Fry chicken in oil until fully cooked.
5. While frying, put pasta in boiling water until cooked Al dente.
6. In a new big pan, add in 3 table spoons olive oil and 1 tablespoon truffle oil. Add in shallots/chopped garlic, and cook for a couple of mins. Add in chicken broth, and seasoning above. Cook until a little bit of broth reduces. Add in cooked pasta and reserved pasta water. Season with seasonings above. Add in cheese and stir. Add in lemon/lemon zest. Stir.
7. Top with cooked chicken, top with more cheese, lemon, lemon zest, parsley, and a drizzle of truffle oil.
